Oolong means semi-fermented (ie oxidised), and lies between black & green teas in character. After rolling, the tea is allowed to oxidise only until the edges of the leaves start to turn brown. The tea is then fired which arrests the oxidisation process and captures the distinctive taste associated with Oolong tea. Oolongs are considered amongst the finest teas in the world, and as with our fine Estate black teas, no flavourings or scents detract from these exceptional teas.
